Linzer cookies . . . min barndoms bästa kakorna

- 250 g rumsvarmt smör
- 75 g brun farin eller brunt socker (kan bytas ut mot strösocker)
- 75 g strösocker
- 2 ägg
- 500 g mjöl
- 1 tsk bakpulver
- 2 tsk vaniljsocker
- ev riven citronskal
- sylt att sätta ihop kakorna med
- Sätt ugnen på 175º.
- Vispa smör, brun farin och socker lätt och fluffigt. Tillsätt ev citronskal, vaniljsockret och äggen, ett i taget. Vispa lite mellan.
- Rör i smeten mjölet och bakpulvret som du har blandat väl innan.
- Degen håller ihop och klibbar inte. Ta ca en näve av degen och kavla ca 0,5 cm tjockt antingen på mjölat bord eller mellan en vilkt bakplåtspapper. Med en form ta ut kakor och lägg dem på en klätt plåt.
- Hälften av kakorna ska man ävet stansa små formar i mitten på varje kaka. Gör det direkt på plåtet annars blir det svårt att flytta kakorna sen.

Grädda kakorna i ugnen för ca 10-15 minuter beroende på ugn. Kakorna behöver inte bli bruna.

Låt kakorna svalna på bakplåtspapper innan du sätter ihop dem två och två med sylt emellan. Se till att lägga ihop en hel kaka med en med hål i mitten. På det sättet får man de snygga Linzer kakorna.Se till att använda en sylt som inte är allt för rinnig.

- Pudra florsocker över hela kakorna, inga problem med att få florsocker över sylten. Detta kommer att smälta.
- Förvara kakorna svalt i burk med lock.
- 500 g all purpose flour
- ½ teaspoon salt
- 250 g unsalted butter, at room temperature
- 75 g granulated sugar
- 75 g brown sugar
- 2 tsp vanilla extract
- 1 tsp baking powder
- 2 medium-large eggs
- Confectioners’ sugar, for dusting
- some jam preserves to fill the cookies
Preheat the oven to 350°F, 175ºC.
In a bowl, whisk together the flour, baking powder and salt. In the bowl of a standard electric mixer fitted with the paddle attachment, beat together the butter and sugar until light and fluffy, about 3 minutes.
Beat in the vanilla extract and eggs, one at the time, until combined, and then beat in the flour last, mixing until just combined. You can use the dough directly otherwise can you refrigerate until you need it.
Lightly flour a work surface and line baking sheets with silicone liners or parchment paper. Using a lightly floured rolling pin, roll out the dough until it is 1/2 cm thick. With a round or fluted cookie cutter, cut out rounds of dough and place them on the prepared baking sheets.
With a smaller cookie cutter, cut out the centers of half of the cookies on the baking sheets.
Cutting out the center of the cookies while they are on the baking sheets will help to preserve their perfectly round shape. Gather the scraps of dough, and continue to cut additional cookies until all the dough has been used. If you find the dough getting a little difficult to work with, flour the working surface.
Bake the cookies about 10-15 minutes, they don`t need to be brown. Remove the cookies from the oven and let them cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.
To assemble the cookies, begin by arranging all the cookies with a center cutout together on a wire rack and dust the tops with confectioners’ sugar. Spread a layer of jam on the bottom side of the remaining cookies, then top with a confectioners’ sugar cookie. Repeat with the remaining cookies.
