Linzer kakor till Påsk
Visst är äggen vackra och nu syftar jag inte på kakorna utan på de riktiga. Är så glad för äggen som jag fick hemskickade av Karin från Två Gårdar. Tusen tack för att jag fick beställa så pass sent och fram för allt för allt besvär med att skicka med posten.

- 250 g rumsvarmt smör
- 75 g brun farin eller brun socker (kan bytas ut mot strösocker)
- 75 g strösocker
- 2 ägg
- 500 g mjöl
- 1 tsk bakpulver
- 2 tsk vaniljsocker
- ev riven citronskal
- sylt att sätta ihop kakorna med
- 500 g all purpose flour
- ½ teaspoon salt
- 250 g unsalted butter, at room temperature
- 75 g granulated sugar
- 75 g brown sugar
- 2 tsp vanilla extract
- 1 tsp baking powder
- 2 medium-large eggs
- Confectioners’ sugar, for dusting
- some jam preserves to fill the cookies
Preheat the oven to 350°F, 175ºC.
In a bowl, whisk together the flour, baking powder and salt. In the bowl of a standard electric mixer fitted with the paddle attachment, beat together the butter and sugar until light and fluffy, about 3 minutes.
Beat in the vanilla extract and eggs, one at the time, until combined, and then beat in the flour last, mixing until just combined. You can use the dough directly otherwise can you refrigerate until you need it.
Lightly flour a work surface and line baking sheets with silicone liners or parchment paper. Using a lightly floured rolling pin, roll out the dough until it is 1/2 cm thick. With a round or fluted cookie cutter, cut out rounds of dough and place them on the prepared baking sheets.
With a smaller cookie cutter, cut out the centers of half of the cookies on the baking sheets.
Cutting out the center of the cookies while they are on the baking sheets will help to preserve their perfectly round shape. Gather the scraps of dough, and continue to cut additional cookies until all the dough has been used. If you find the dough getting a little difficult to work with, flour the working surface.
Bake the cookies about 10-15 minutes, they don`t need to be brown. Remove the cookies from the oven and let them cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.
To assemble the cookies, begin by arranging all the cookies with a center cutout together on a wire rack and dust the tops with confectioners’ sugar. Spread a layer of jam on the bottom side of the remaining cookies, then top with a confectioners sugar cookie. Repeat with the remaining cookies.
For Easter I use passionfruit curd to do my "egg" cookies. Lovely.
